Was this turkey cooked alright?
I roasted a 20 lbs, unstuffed turkey for 5.5 hours @325. At that point the pop- up timer had come up. I *tried* to use my Meat Thermometer, but the glass cracked, fell out and the indicator came off...it was at 160-something just prior. Everything looked cooked, juices ran clear, etc. It wasn't until after eating and removing the thighs that I became concerned...that meat all looked okay, but in the joint, the juice was reddish. What do you think, was it okay or did I just send my family home with food poisoning???
You took it out when it read at least 160, then it had some carry over cooking which probably brought it up at least another 5 degrees. 165 is the safe temp set by the FDA.
You and your guests are fine. Keep in mind a properly cooked bird will actually have a VERY light pinkish color to the white meat. This normally scares people and then they over cook it until the white meat is white, dry, and yucky.
