Just like every year, I am making the "Good Eats" Roast Turkey recipe. Question about temperature for big bird?

The past few years, I've cooked the turkey to 165 degrees (alton recommends 161) and had great success. However, that was a 15 pound turkey. The turkey I am making for Sunday is 21 pounds! What temperature should I take the turkey out? I will be using an electronic Probe Thermometer to keep track of the temp in the breast. Please help!!!!!!!!!

You'll be fine if it's at 165 in the thigh, make sure you let it rest for at least 20 minutes. I think that's the biggest difference in a bigger bird, is the length of time it takes to cook and the time you need to let it rest.
(I wouldn't reccomend taking it in the breast only because if the breast is 165 the dark meat is sure to be undercooked)
